This creamy vegan High Protein Mac and Cheese is insanely delicious and packed with 35 g of protein and 14 g of fiber. You can prep it on a Sunday and it reheats perfectly for the next 4-5 days. I usually make 4 bowls, and they're lunch or dinner for Cam and me during the following couple of days. It really makes life easy to be able to forget about planning one or two meals each week.
